I'd say text/orgmode (text/x-orgmode if getting into IANA is not an
option). text/org feels too generic, as not everyone is familiar with Org.

I just wanted to write a similar request. My problem derives from a small
screen, so even the basic set of options gets truncated. It would be nice
if I could somehow scroll the dispatch screen.

I don’t know of such an Org extension, but what you are looking for is an
advanced shopping list, and for your leftover components, asset management.
You may also find org-cook (I lost the link, but I will look for it when
not on a cell) useful.
