I usually use M mode, somewhere between 1/30 and 1/125, depending on the lens used.
Flash in E-TTL mode, center FP, FEL sometimes, if it is tricky.
Depending on the distance, effect and lens I bounce or not.

I think the key here is that the area that is evaluating how much
