I am on Debian unstable, Gnome 3.20.
I also have this issue, which i never managed to resolve. When i select
text in Evolution it turns white. As far i searched it must be an issue
with gtk but as Ralf said you cannot change anything specific for
evolution, i already tried it.

an issue with the default Adwaita theme for GTK3 apps such as
