I had the same problem and setup.
With mine I had to set the Scan attachments in store in the background or
the server would freeze up. Once that was set everything has been running
smoothly.
Give that a try.

When I create a new user using the Exchange Administrator and I select a
New Windows NT Account it creates the username on the domain with a blank
password. I would like to change that. Any thoughts?
