I'm looking at Red Gate, but the Symatec/Veritas Enterprise Vault some some

You can also check out if sunbelt software solution supports exchange 2010.
Sunbelt has excellent support, and does archiving not sure if it exchange
2010 compatible, but I bet it will be shortly.

You need to create the dag first. Then force replication between the two sites.
Then, I recommend you add the REMOTE server to the dag first, force
replication, then add the local server.
Insofar as database management, I think that once you get the servers added to
the dag, you'll be fine.
