My guess would be that his iPhone is setup to sync with your exchange server using OWA but he then selected iTunes to Sync his Outlook contacts with his iPhone (screenshot of iTunes here - http://www.bioinformatics.org/~deepan/freeoniphone/outlookimg2.png). This, I'm guessing, would overwrite the contacts on his iPhone with the contacts from the local computer he is running iTunes on (which is probably empty) and that then replicated to your exchange server.

It is a true "synch". I know of a few people who have upgraded to the latest iPhone O/S and it has FUBAR'd their devices and had to revert to backups.
