Sorry to bother you, but I thought I would just update you with my disaster
recovery scenario.
Here is what I done:

1. Stopped All exchange Services
2. Deleted the *Data Folders under Exchsrve program folder
3. Restarted Exchange Services
4. Exchange started to Complain that although the objects existed in AD, the
files were missing.
5. Ran NTBackup. Prior to starting step 1. I had created a BRAND NEW online
Exchange backup.
6. Dismounted the Mailbox/Public Store. Stated this could be over written by
a Restore.
7. Restored the Microsoft Exchange Server Information Store icon, and chose
Last Backup Set and Mount Databases. Specified that C:\TEMP was the location
to store the restore.env file and logs!
8. Restore stated it was completed.
9. Checked Event Log. Found a whole load of Exchange Error messages stating
that Hard was not completed. The Event ID's are as per the Technet Article
Q253931
10. Opened a command prompt, went to the exchsrvr BIN Directory, run the
following command as per the Technet Article - ESEUTIL /CC C:\Temp\First
Storage Group <Pressed Return>. I should point out that the First Storage
Group folder was created by NTBackup/Exchange and not me!
11. The screen scrolls down with various options for this tool and I am
presented with an ">" if I press any key, it takes me back to the command
prompt. When viewing the details on the screen I see a Jet error, which is
stating that it cannot find the restore files). Again, I am still unable to
find any Technet article on this problem.
12. Try to restore from an Offline Backup. Stop all Services, perform
Restore. Reboot the Server and I am still unable to mount the Databases :(
13. Stop all services, deleted the *DATA Folders, restart services, mount
Mailbox/Public store and create new stores. 
14. Reimport my data from a .PST File

As you can see, I am not having much success :( And I am very disturbed that
despite the fact I am following all the directions from Microsoft's Technet
/ white papers, I am still experiencing problems!

Can anyone actually tell me or confirm that they have tried to simulate a DR
scenario like this and they have 100% recovered successfully.

Simon,

Sounds to me like your doing everything you should be doing.  Especially by
practicing your disaster recovery solutions!  I wish I had more suggestions
for you, but since you appear to be performing the restore by the books, I
don't know of anything else to look out for.

Yes Peter. I also dismounted the stores first :)
Then ticked the box, this can be overwritten by a restore!

Obviously I think the problem here is me :) But if anyone can offer some
guidance on what I should / should NOT have done, then I am all ears. I have
downloaded all the white papers from Microsoft and Veritas on disaster
recovery scenarios, so I will give this a try this evening.

But if this was a "real" disaster recovery situation, then I would look
extremely stupid :(

Did you check the box for the databases in Exchange System Manager which
allows the database to be overwritten by a restore?

I tried to simulate a disaster recovery scenario. The downside is the
recovery was not a success. I do FULL Online Backups of my Exchange Server.
I stopped the services, deleted the core components of MDBDATA and MDTDATA
once the services were stopped and then restarted.

Obviously, exchange complained! Brilliant - lets restore from Backup!

Performed a restore while the services were online and it completed with
errors. Checked the event log and there were errors stating that the Mailbox
store could not be mounted. I verified a Technet Article (Q253931) and it
told me that I should have selected "Last Backup Set" - however I could not
find this option in Veritas.

So I decided to run the ESEUTIL /CC tool as per the Technet instructions.
>From the Exchange Server BIN Directory at a command prompt I typed the
following:

Eseutil /cc C:\temp\First Storage Group <Return Key>

This generated a Jet error that I have yet to find any TechNet article
against. I spent a long time sorting this out, to no avail. In the end I
started from scratch and rebuilt the Server.

I was not happy about this, because I wanted to simulate recovery
procedures. Does anyone have any idea what mistake(s) I may have made about
this?

Any feedback is most welcome, considering I am quite new to Ex2k.
