I have just moved from SBS 2003 to SBS 2008 along with Exchange. The best resource I found and used was sbsmigration.com It had all the steps and processes to move exchange from 2003 to 2008 via a swing out to Temporary exchange server, it worked well and the $200US was money well spent, at
