Hmm OK so to answer my own question, it appears that for a new mailbox it
defaults to simply showing the free/busy block.
For the mailboxes that we've migrated and set as rooms it seems that somehow it
has defaulted to showing the meeting subject as well. Fortunately we only have
a dozen or so
