Whichever method you
set on the server. If you choose plain text, then those that successfully
authenticate using plain text will be able to relay.

I've got a person using the Mulberry e-mail client and it has a choice of authentication methods: plain text, NTLM, SSL (which we're not running on our Exchange server) and a few others.
