profit of the enhanced ACLs features. Please help me define a simple
and good ACL setup that _should_ work so I can better test the
implementation.

Exim I think normally takes it from the system hostname.
However you can overwrite this by setting
qualify_domain = domainname
Within the main exim configuration section.
