The quarter note notehead is #226 in the Maestro character set. Use
MassMover - Mass Edit - Change - Noteheads - Selected Notehead to
change the noteheads all at once.

I think the black diamond notehead you are looking for is number 226, but I
don't know the other part of your question (how to change them all globally.)
