I would like to know the exact staff height and scale system's % first
attributed and I've the feeling that Options > Page Format

Look in the Engraver Text Character Set. Letter R gives you a left bracket;
Shift-R gives a right bracket. These may serve your purpose. Also, I think
I use the brackets in the Times New Roman font. I added brackets to my

The freeware font Fughetta contains accidentals with square brackets. You
can find the music fonts Toccata and Fughetta here:
