I'm here again with a question that will look trivial to almost everyone.
I'd like fink run compilers on my G5 with the '-fast' option instead
of the '-g -O2' which goes by default. That would help (for
instance) to produce a slightly faster ffmpeg executable and, in any
case, to take advantage

I think you hit it on the head with the installing things separately.
I've had similar results with other installations/upgrades using Fink,
and it seems easy to confuse it on the dependencies.
If I have an install problem, the first thing I try is to install each
dependency separately.
