You don't. Even on a 5 month old MacBook Pro running 10.7 from the
factory, 'uname -p' says i386. uname -m is more informative for
whatever you might be thin

Well, I just installed gst-plugins-0.10 on 10.6
the only thing I had to do was a
touch /sw/.//.../patchfile
for some package
because it didn't exist ...

I tried gst-plugins (0.8.12) on a os x 10.6, no problems
You need 0.10?
