I've done it by using a 1px line across the letters >> converting line to
fill >> break apart everything.
Then it's all one shape and you can change the fill. It's probably not the
best way to do it but it worked for my situation. -Andy

Uhm... if you're doing what I think you're doing... have a play with
the "Lock Fill" option on the toolbar under the tool palette (it only
appears when you have the fill tool selected). That should help.

I'm not familiar with Illustrator's Make Compound Object feature, but you could
try bringing the text in as an image, doing a very high quality 'trace bitmap'
then filling the new vector graphic with a gradient.
