I have looked in all documents i can find, but can not find which settings i can use on the different tags in the flex-services.xml file. I might have missed some, so if you have a location, you're welcome to share :)

The Flex Dataservices thingy has a resource/config directory. In this directory you have (as you said) example files of different xml configurations:
- data-management-config.xml
- messaging-config.xml
- proxy-config.xml
- remoting-config.xml
- services-config.xml
These have however
