Personally I use a 10Hz step size for both SSB & CW. Whilst I find I can get in the general ball park 80% of the time, and can do the rest with a little mouse wheel turning, I do find that lengthy sessions of tuning around the bands becomes less and less comfortable due to arthritic fingers.
To overcome this I use the mouse for click tuning and a homebrewed VFO knob (surplus USB mouse and Ten Tec rotary encoder) mounted on a panel which falls naturally where my left hand is. The knob isn't weighted and doesn't need to be. Since it is only controlling a limited frequency excursion to tune in the last few 10's of Hz I rarely have a problem with the frequency display having to play catch up.
