There are several ways to do it, but I think you get the best quality with:
Print to PDF. On the Adobe PDF printer Properties dialog box, on the
Paper/Quality tab, select Black & White.

The hard way, use The Bluebeam product and change each link text to black. I
believe Bluebeam has better editing capabilities than Acrobat.
