I'm looking for advice on recording a long distance interview. I originally
thought I could do it in person with my Zoom recorder but the subject's work
plans changed and will not be coming out from the East coast anymore.

I have done cross-country interviews before, and I feel your best possible
quality option is to have someone on the other end show up and mic/shoot
the subject while you speak to them on the telephone/skype/etc.
Also there is in fact an iphone app to record a conversation, although I am

Best thing to do is find someone to go out to their place and record them
while they're on the phone talking with you. Or find a studio with the
ability to do it remotely in his area.
If you try and do it over skype or something you have no control over their
setup, or over the room acoustics.

Quicktime Movie has a built in screen recorder that is free. Camtasia as
well. I would just go with Skype and a screen recorder. Then you can crop,
etc. later...

Why not just use Skype along with software like Wiretap (
http://www.ambrosiasw.com/utilities/wiretap/), which records audio direct
from an application?

For one thing this Wiretap only records audio, not video. And the second
part; it is $69 bucks. You can do this with a free on a Mac with an
application called Soundflower that directs it to garageband for audio
record.
Windows, I have no idea.
