Homestyle Chicken soup
This chicken soup truly originated from a Mexican kitchen. All of the special
seasonings and flavors, this is sure to be a crowd pleaser and worth your
effort.

Ingredients:
1 whole chicken
4 stalks celery, cut small
4 cloves garlic, cut small
1 bunch green onion, cut small
1/2 cup fresh parsley, chopped fine
1 can Spanish tomato sauce
2 pkgs sazon by Goya (seasoned salt found in Mexican stores)
2 tbsp safron
1 small potato, peeled and cubed
1 medium size yucca root, peeled and chopped in bite size pieces
1 can chicken broth or chicken boullion cube
1 handful of angel hair noodles
1 tbsp olive oil
1 tsp salt
1 tsp adobe seasoning
Method
Take whole chicken and boil it in half pot of water until done. Remove and peel
chicken off bones and throw it back in broth. Add all ingredients to broth
except yucca root and pasta. Let it all boil together for about an hour on
medium. Ten minutes before done, add yucca root and pasta and boil on high for
10 minutes but keep stirring occasionally. You may need to add about 1 or 2
cups water when you put chicken back in broth.

Notes: You may need to add 1 or 2 cups of water if it boils down.
Number of servings: 10
