Why do you need boot through UEFI?
FreeBSD on Hyper-V through UEFI still have issues, and the fixing is

I think you used the Hyper-V terminal. Currently the mouse driver does work
properly.
A workaround is to install tightvnc on FreeBSD VM, and use tight vnc viewer on
your windows.

Recently, I explored the possibility to implement a FreeBSD runtime (based on
Jail) for opencontainers/runc. I have an experimental implementation of FreeBSD
runc, which supports some of runc commands now.
