You should try that for yourself. In my opionion, MPEG4 with a bitrate of 1800kBit/s and 384x288 pixels is quite a good compromise between space and quality. To reach a really good quality, you can not encode MPEG4 while recording. IMHO, really good encoding quality is only reached by a two pass encoding. I am thinking about recording with mjpeg (720x576) and wav. These recordings should have really good quality, but huge file sizes. Afterwards, these files could be transcoded to mpeg4, 1000kBit/s (or even lower) in 2-pass encoding. It should be possible to setup an automatic process which does this. Perhaps someone has done something like this already?
