I've only done this twice, but if I remember correctly you just have to go
to the Chooser while you're in Classic and choose the printer you want to
use. So, while in the Classic application you're using, go to the Apple
menu, and the chooser should be available to use there.

I'm now using a new iBook at work. While its a bit of a hassle to
find/capture/choose printers at each new location (four different buildings
on a regular basis), this does not seem to affect the printer that 'classic'
applications want to use. They are still looking for the first printer I
set
