I can't remember why/when but I had a similar problem. it can be solved
by booting using Knoppix64 then chrooting, or you could install a bare
minimum x86 system on the side, compile a kernel with x86_64 support,
reboot and chroot...

And to finish, I can't chroot with the amd64 stage tarball when booting
with the x86 install

That ususally means you downloaded the x86 stage tarball, rather than
the amd64 stage tarball.
