Phil, yes it is possible, but you cannot use mapped drives if you are
running Geoserver as a service, Windows doesn't allow this. UNC paths should
work, but it is tricky at times. Unfortunately I can't remember exactly how
I got it running...

Yep, you can. I am adding layers/styles using REST (java client) and
I can use the layer without a geoserver restart.

It is not possible to connect to a specific store. But on 2.1 there is the
concept of virtual services in which you can generate a capabilities
document for only the layers in a specific workspace. Or a single layer
itself.

yeah this is supported, although on windows I tend to map such
resources as real drive (Y: as an instance) in order to avoid
problems.

about what you are doing:
- geoserver version
- jdk versione
