Since there is no gwc folder inside the GeoServer data folder I wonder where

Another reason for read-only feature types is column types that GeoServer
does not understand (as an example, hstore), if they are there editing
will be disallowed since the code does not know how to write on them

GeoFence I believe can do something like that).
Or it could be the request that's different, change the web.xml to enable
logging requests and request bodies (there

I am not familiar with geonode so this may or may not be helpful. A quick web
search indicates to me the when setting up geoserver for geonode geoserver runs
under tomcat. If your geoserver is running under tomcat gwc is set up in
/webapps/geoserver/WEB_INF/web.xml and will look something like t

the GWC documentation says so. I guess that if I want to set a different
folder for the cached tiles I have to add this to the web.xml:
GEOWEBCACHE_CACHE_DIR
/my/new/gwc/folder/
By default it is not set in web.xml. And if it is not set, according to the
documentation, the gwc tiles
You can just use JVM properties like
-DGEOWEBCACHE_CACHE_DIR=
and
-DGEOSERVER_DATA_DIR=
in order to move your folders somewhere else in the system.
