I ended up arriving at a WFS query with outputFormat and BBOX for the problem I
was trying to solve.
The 2020-09-28 build with the WPS extension has the required dependencies and
one can now export to .csv via gs:Clip or vec:Clip.

I have just downloaded and deployed Geoserver 2.17.2 and it was working fine,
then I tried to add mongodb extension by downloading it and extracting its jar
files (6 files) into web-inf/lib directory, after that geoserver failed to
deploy with exception "classNotFoundException

libs to read csv maybe?).
There is no transitive dependency management here, anything has to be
cherry-picked by hand

The assembly is really "dumb", there is a "release" module that collects
all its dependent jars in a folder,
and assembly directives that are
