Ciao Umair,
there should be a colorpicker associated to that field.
Otherwise, going by memory you should be able to set it in the HEX
for, e.g. #ff for white.

If I set an output color the image would not display with an error
"Rendering process failed. Band Number 2 is not valid". Each image only had
one band.
NB: Geoserver 2.0.2 installed on Windows Server 2008.
