Can anyone recommend a hands on tutorial for learning layers? Would this book
transfer over to Gimp?

You might want to try to look through the help of GIMP itself. Have a look at
this URL: http://gimp.open-source-solution.org/manual/index.html . Section 8 is
a good place to start for someone looking to understand layers as far as I can
guess.
