A couple years ago I came up with an idea that I thought was a good way
to do this: 

When the installer starts, it should ask you what your familiarity is
with Linux in general and this distro in perticular and tailor the
following options and help screens to your knowledge level.

For instance, I'm fairly competent at installing Mandrake.  I know
enough about running Linux to make a stable server (146 days uptime and 
counting!), so I dont need a help screen explaining to me why I need to
enter a user other than root.  A complete newbie to Linux in general,
though should definitely see that screen.

Further, as you mentioned, there should be more choices for default
installs and then you should be able to customize those defaults if you
so choose.  As an example of this, Mandrake by default uses postfix
for SMTP, but I prefer sendmail.  If I'm setting up a server that needs
to run SMTP, it should set up (and in the best case, at least partially
comfigure) SMTP services.  During customization, I should be ably to
choose my mail transport program.

Absolutely!  I'm learning in my (fairly) new job that it's better to ask
what someone needs and just supply those *services* rather than asking
what they want me to set up, because invariably I'll come up with a more
cost effective and efficient solution... (fscking client went out and
bought M$ Exchange and expects me to make it work...pptp via NT and has 
a firewall box that doesn't work with their ISDN router...)
