In Bardez. --------------------------------------------------------- CULLINARY CORNER: Daisy Rodrigues [EMAIL PROTECTED] --------------------------------------------------------- Here are recipes for: delicious Brinjal/Aubergine pickle and tangy mango chutney, these can be sealed in pretty jars that can be included in Holiday baskets. BRINJAL PICKLE 16 small brinjals, 2 tablespoons salt, 30 flakes garlic, 4" piece of ginger, a few curry leaves, 1/2 cup of sugar, oil (2.5-3 cups), vinegar (2.5-3 cups), Grind in vinegar: 80 flakes of garlic, 40 dried red chillies, 1.5 tsp turmeric, 1/2 tsp mustard seeds, 1.5 tsp cumin seeds, 1.5 tsp fenugreek. Wipe the brinjals, cut them into 1" pieces, apply salt and keep aside for about 3-4 hours. Thinly slice the first batch of garlic and ginger. Separately grind each of the spices in the second batch with vinegar. Heat oil in a pan and fry the sliced garlic and ginger slightly. Then fry each ingredient one at a time on a slow fire. Pour any remaining vinegar. Finally add the brinjal pieces, sugar and curry leaves. Cook on a slow fire till brinjals are tender. Add salt if necessary, remove from fire, cool and place in sterilized jars. MANGO CHUTNEY Mangoes, peeled and cut into strips, 1 qt apple cider vinegar, 2 cups granulated sugar, 2 cups dark brown sugar, 2 cups chopped onion, 6 cloves garlic (minced), 4 teaspoons cracked black pepper, 1/2 teaspoon salt, 2 teaspoon hot red (cayenne) pepper, 1 tablespoon cinnamon, 1 tablespoon minced fresh ginger root, 1/2 teaspoon ground cloves, 2 teaspoon ground allspice, 2 teaspoon ground mustard seeds, 1 cup raisins, 1 cup carrots, 3 pounds Granny Smith apples (peeled, cored and chopped) Combine all ingredients in a large bowl and store overnight in the refrigerator. The next day, put the mixture in a large, heavy pan and bring to a boil, reduce heat and simmer for 30 minutes or until syrupy.
