It's cuisine has been strongly influenced by French cuisine. Who can resist the famous Belgian waffles - this is one of my favorite recipes that is loved by my 2 kids and is prepared by all of us on some Sunday mornings. BELGIUM WAFFLES 1/2 ea sticks of butter; (NOT margarine), 2 cups sugar, 7 to 8 eggs; medium or large, 4 1/2 cups flour Soften butter until nearly melted, but not quite; cool. Beat eggs. Add sugar gradually. Add butter. Add flour a little at a time, mixing thoroughly after each addition. Refrigerate dough for several hours. Cook on waffle iron until light golden brown (not too dark!). Use a heaping tablespoon of dough on each section of waffle iron grid of dough in center of iron. Separate sections when cooked. Recipe can be doubled. Here is an interesting Belgium dessert: BISCUIT DE REIMS Take 9 eggs, weigh them and take the same weight in sugar. Take 6 eggs, weigh them and take the same weight in flour. Take 3 eggs, weigh them and take same weight in butter. Beat the whites of 9 eggs till stiff. Fold in sugar. Then add the 9 egg yolks, well-beaten. Pour in flour gradually. Put in melted butter. Heat oven to 300 degrees. Start baking in a slow oven - increase to moderate. It takes at least 1 hr. to bake.
