Leftover meat, fish, veg and fruit is put in this drum, occasionally sprayed with a slurry of cow dung and spraying EM solution combined with saw dust. Earthworms are added to create vermicompost. The next few recipes are going to be just that and more. Be ready to prepare some spectacular salads for your next event; these recipes are mouth watering and very easy to put together. Salads don't have to be boring... you simply have to be creative! I am going to start with two of my favorite Indian salads. The first one is a cooling cucumber salad called: Raita: - 1 cucumber sliced or cubed, 1/2 white onion, finely chopped, 1 small tomato, seeded and finely chopped, 1 tablespoon chopped cilantro, 1 tablespoon chopped mint, ½ cup plain low-fat yogurt (add more if you like), 1 tablespoon lime juice, a pinch of sugar (optional), salt to taste, pepper to taste, 1 teaspoon of roasted cumin seeds Wash the cucumber and partially peel in long strips, leaving alternating stripes of green skin and white flesh. Cut lengthwise into long thin slices, then across into matchsticks. Combine with the onion, cilantro, and mint in a large bowl. Whisk the yogurt, lime juice, salt, and pepper and sugar (optional) together to make the dressing. Toss with the vegetables and let sit in the refrigerator for 10 minutes to marinate. Toast the cumin seeds in a dry pan and toss and mix into the salad before serving. Serve with any hot dish to cool your burning mouth! The next salad is called: Chaat (fiery fruit salad) -In India, this colorful fruit salad is sold from sidewalk stands as a cooling snack on hot days. 3 lbs. of mixed fruit in season peeled, de-seeded and cut in 1 cm. cubes (banana and oranges are a must. Some of examples are apple, pear, nectarine, plums, guava, mango, pitted cherries, pineapple, kiwi, seedless grapes, etc., 4 tablespoons fresh lemon juice, 2 teaspoons cayenne, 1 teaspoon cumin seeds, roasted and crushed into a powder, 1 teaspoon paprika, 1 teaspoon salt, 1 teaspoon black pepper, 1/2 teaspoon mint, 1 tsp. powdered ginger (optional). Place all fruit in a large serving bowl and mix in lemon juice. Mix all the spices in a separate bowl, pour over the fruit and mix well.
