Onion/Pepper/Mushroom Frittata 6 large eggs, ¼ cup milk, 1 tsp each of minced basil, oregano & thyme, 1 teaspoon salt, ½ teaspoon pepper, 1 medium onion (chopped fine), 2 bell peppers 9 (seeded & diced), 2 ounces white mushrooms, sliced, 1-2 ounces of shredded, cheddar or any mix of cheeses. In bowl, beat eggs with milk, basil, oregano, thyme, salt, and pepper until frothy and light. Meanwhile, in a small pan, sauté onion until limp and golden, set aside. Coat inner surface of non-stick, ovenproof, 10-inch skillet with cooking sprays. On stovetop, heat the 10-inch skillet. Add egg mixture. Cook, using a spatula to loosen and push down sides of frittata as with an omelet. Do not scramble. Cook until almost done, leaving egg mixture slightly runny on top. Top with reserved onion, diced peppers and sliced mushrooms. Sprinkle shredded cheese evenly on top. Place skillet with frittata in the middle of the oven under the broiler at least 6 inches from heat source. Remove when cheese is melted and the top of frittata is golden. Slide onto a hot platter or warming tray. Cut with a sharp knife or pizza cutter. Goanet recipes come specially from Daisy Rodrigues.
