Spicy Mango Chicken Curry Serves 2
* 3 Chicken Breasts Chopped into Bite Size Pieces * Flesh of 1 Whole Mango, coarsely chopped * 10 Cloves garlic, crushed with the side of a knife and coarsely chopped * 5 Teaspoon Curry Powder * 10 Cayenne Chillies sliced in half * 5 inches Root Ginger grated * 5 Tablespoons Vegetable Oil * 1 glass white wine or eqivalent water Method Heat the oil to a medium heat, add the curry powder and stir for 1 minute. Add the chicken and brown on all sides. Add the mango, stir fry for 5 minutes. Add the wine, garlic, ginger and simmer for 5 minutes. Add the chillies, stir fry until the meat is cooked. Drain off excess oil and serve with plain rice.
