Available at bookshops in Goa, including Broadways. --------------------------------------------------------- Goan cuisine ||| From Daisy Rodrigues, specially for Goanet --------------------------------------------------------- Jollof (rice dish from Liberia) 1 pound chicken, 1 pound stewing beef, 1/2 pound smoked ham or bacon, 1/4 cup flour, 1 medium onion, chopped, 1/2 cup cooking oil, 1 small can tomato paste, 2 cups rice, 1 pkg frozen mixed vegetables, 3 cups water, salt and pepper to taste. Cut up chicken, beef, ham, and bacon. Season with salt and pepper. Heat oil in a pan, saute onion; add ham, beef, bacon and tomato paste. Stir well, cover and simmer with 1 cup water for 1 hour. Add remaining water, salt, and pepper. Bring to a boil. Add chicken and rice and simmer until rice is done.
