It is expected to be published in a book-form shortly.] ------------------------------------------------------------------- CULINARY CORNER Pork Sorpotel ------------------------------------------------------------------- Pork Sorpotel I have used only the meat/liver in the past and it turned out fine. 2 lbs pork meat, 1/2 lb. pork liver, 1/2 lb.heart, 1/2 lb. tongue, 1/2 lb. kidney and 1/2 lb. ear, 12 dried red chilies, 12 peppercorns, 12 cloves garlic, 1 inch ginger, 1 tsp cumin seeds, 8 cloves, 2 one-inch pieces cinnamon, 1/4 cup Goa vinegar or any strong vinegar will do, 1/2 cup vegetable oil, 1/4 cup coconut feni (optional), 3 cups water, Salt to taste, 1 tsp sugar, (according to your taste) or 1/2 tsp is fine, 6 green jalapenos (fresh chili), 4 medium onions - chopped fine Method: Wash and pat dry the meats. Immerse all the meat in a pan with water on medium heat. Cover the pan and parboil the meats, (approx. 20 minutes). Cool and dice the meats fine. Keep aside the leftover stock. Grind all the spices including vinegar into a fine paste; do not include the jalapenos and onion in this paste. Heat the oil in a deep pan on medium heat and lightly fry all the diced meat until lightly browned. Add the ground spices/vinegar paste to the pan and continue cooking for 5 minutes. Add salt to taste, coconut feni, any remaining vinegar, chopped onions, jalapenos, sugar and the broth of the boiled meat. Lower the heat and let the sorpotel simmer for 45 minutes or more. Tak! e care to stir it occasionally. When the oil comes to the top and the sauce is thick, remove from the heat. Remember that this recipe tastes better on the 2nd day and a few days thereafter, make sure it is heated well on the day it is served.
