The -c flag for r.out.gdal is new in version 6.4. I don't know what
version you use, probably 6.3, there -c is indeed not a valid flag for

three RGB values instead of one elevation datum.

Finally I solved the problem with the –c flag …
r.out.gdal –c mydem mydem.tif
This will keep all elevation data in the file.
An upgrade to GRASS 6.4 (RC2) is necessary.
