Have you rebuilt your auto* and libtool after installing latest OS X and
XCode?

(http://home.gna.org/gregorio/installation-mac), and am able to change the
chant font with no problem within the GABC file.
I think that Greciliae is the standard font; to my eye, it is the most
attractive
