Either something went wrong when you built pango, or you found a bug and pangocairo unconditionally references symbols from pangoft2 even when built without freetype support. In the latter case you should file a bug report, though you almost certainly want pango *with* freetype support - make sure you have the required headers (harfbuzz, fontconfig, freetype2) and rebuild pango.
