That's the method I use, though I usually do it by machine, sewn in one step, slit-fabric-side up.
When you get to the point, keep the needle down, manipulate the fabrics into their new arrangement to sew the other side. Make sure the pieces are turning smoothly on the needle, and not twisting and distorting.
