I don't know any stores meet your need but here is a tip:
Get a hardware parts catalouge (online or at the shop) and cherry-pick
some parts
GNU/Linux friendly-shops means primarily operated or with GNU/Linux (more or
less) friendly-persons.
Unfortunately, people come and go too. The same for shops !
