I think this is a bug in hugin-mac-2011.0-beta2.
In Preferences -> General tab -> 'User Interface' I have deactivated
Project Name: [ ] based on containing folder
but when I press the "Stitch now..." button I still get this as a
suggested file name:
-Volumes--Users-name>--
