Icelandic Christmas Cake

Original recipe yield: 1 -11 inch loaf pan

INGREDIENTS
1 cup white sugar
3/4 cup butter
2 eggs
2 1/2 cups all-purpose flour
2 teaspoons baking powder
3/4 cup milk
1/2 cup raisins
1/2 teaspoon lemon extract
1/2 teaspoon cardamom flavored extract


DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Grease one 11 inch loaf pan.
Cream the butter or margarine and the sugar until light and fluffy.
Add the eggs one at time beating well after each one. Stir in the
milk, lemon and cardamom flavorings. Stir in the flour and the baking
powder.
Sift a little flour over the raisins then stir them into the batter.
Pour the batter into the prepared pan.
Bake at 350 degrees F (175 degrees C) for 55 to 60 minutes.
