For WinCVS, try the Daily Use Guide:

There's a WinCVS guide I wrote for internal use at my company, but it
is very general:

You could adapt either of these if you are using command line CVS -
they aren't really very different. At least, the bits people find
hard are the same!
Top tip for them:
- Always do "cvs update -d -P"
