Although we are a mac school (big surprise coming here....) I still use
a
PC and have one at home. (See I told you it was a big surprise.)

I agree with Chad and Jeremy on Audacity. It is free and I used it to
transfer musch of my music collection that I had on cassette to MP3.

Also agree with Jeremy on the record direct to iPod method.  The
microphones that are available are easy to use and all new iPods come
with
the record feature.  Make sure you get the correct mike for the iPod you
have.  Teachers will probably find this to be the easier way for them to
record as it is a "push button, talk,  and it is there" solution
