I'm afraid it most likely is the other way around.

PAdES style document time stamps don't care about how PDFs are built, they
may be added to any PDFs in exactly the same manner. Thus, the LTV document
timestamp most likely is added completely according to the PAdES
specification part 4.

XFA viewers (e.g. Adobe Reader when showing a PDF with XFA forms) on the
other hand may not accept signing information using mechanisms beyond ISO
32000-1 and the current XFA spec (still 3.3 I assume). Thus, such a viewer
may be baffled by the document time stamp.

You have to keep in your mind that PAdES style document time stamps
currently are merely an extension to the current PDF specification. They
will be included as core material in the upcoming new one, but that may
still take some time to be published.

Any viewer (and even every viewer mode, e.g. the XFA mode of Adobe Reader),
therefore, currently is completely working by the book if it ignores or even
complains about document time stamps.
