Did you select "Functional test mode" in the test plan? I think if not you
can´t see the html response by de server.

I think the problem is that the servlet I'm testing
isn't setting the content type as HTML, so JMeter
doesn't realize that HTML is being returned. Does that
sound like it's possible? Is it possible to fix this
in JMeter, without editing the servlet code or the
JMeter code?

Impossible to say what's wrong (if anything) from the information provided.
1) Check the jmeter.log file for errors
2) What do the other tabs say?
