It simply involves setting up the clients with "recent:" prepended to the email address. I used to use this with outlook on multiple computers - then I invested some time to understand IMAP and never looked back. I have the same problem with Gmail, and only with Gmail (I have a number of email accounts on many different servers). It appears that it does not fully respect the "leave email on server" request, and instead marks messages as "read" as soon as one client (whether it's Outlook or K-9 that gets there first) has read the message. I've looked hard (and in vain) for any switch in Gmail that will make it correspond to the normal expected behaviour.
